Harvesting several clones of Pinot Noir from various blocks across our Estate vineyard spanned a two week period, ensuring a diverse tapestry of flavors. Following destemming, the grapes underwent wild fermentation in small open top fermenters, receiving gentle hand plunging up to four times daily.
