醸造方法：ワイナリーの所有する畑の中で最良の丘にある最も古い単一畑から収穫されたブドウを厳しく選定。全体の70%は除梗後、10℃にてコールドマセレーションを24時間行います。ソフトプレスとデブルバージュを低温で24時間。発酵はフレンチオークの小樽で行い、9ヶ月間澱と共に熟成します。残りの30%は、除梗後、フタのない樽に直接入れられ、果皮と共に発酵、熟成。その後、ブレンドされ、アンフォラにて16ヶ月熟成します。
