醸造方法：除梗後、ブドウをソフトプレスし、75HLのステンレスタンクで23℃から発酵を開始。発酵初期にデレスタージュを毎日行い、その後ルモンタージュで温度を26℃に上げてアルコール発酵を完了します。その後30HLのステンレスタンクに移し、マロラクティック発酵とバトナージュで細かい澱を攪拌させてワインに複雑味を持たせます。28HLの新樽ストキンジャーで約2年熟成します。
