If you're on Discord, you probably know Maxwell and are familiar with their backstory, but for those of you who aren't, they used to roast for a different Chicago roaster: Jimmy Beans. I didn't always love their sourcing, but I really enjoyed the roast of the coffee I tried from them. Since launching their own roastery, Shoebox is quickly becoming one of my favorite US roasters.
