製造方法：収穫後、除梗・破砕を行い、果汁はステンレスタンクに移されてアルコール発酵を行います。発酵の進行段階に応じて、1日2～3回、15～20分間の短時間のポンピングオーバー（循環）を行い、果皮への負担を最小限に抑えながら、ワインの複雑性を引き出します。発酵期間は約6～8日間。初期は約16℃、中盤は20～22℃、終盤は25～26℃まで段階的に温度を上げ、最終段階では冷却を止めて発酵を完了させます。発酵終了後、ワインは澱引きされ、澱を取り除いたのちフレンチオーク樽へ移され、14か月間熟成されます。マロラクティック発酵はすべて樽内で行われます。熟成はアリエ産オーク樽を使用します。（新樽50％、2年目樽25％、3年目樽25％）
